Read a Hass by its skin
Hass avocados darken as they ripen. Order at the stage you need and plan your shelf from there.
Stage 1
Firm green
Hard to the touch. Best for long transit and stocking ahead.
Stage 2
Turning
Colour starts to deepen. A few days at room temperature to ripen.
Stage 3
Ready
Dark skin that gives slightly to gentle pressure. Ready to eat or serve.
Stage 4
Very ripe
Near black and soft. Use the same day for guacamole and spreads.
Ripen at room temperatureKeep firm fruit out of direct sunlight until it softens.
Chill once ripeMove ripe avocados to the fridge to hold them for a few more days.
